Winter 2026 Maris Otter Pilsner - This beer showcases Maris Otter, an heirloom barley bred in England in 1965, the same year The Beatles scored three #1 UK hits. Stars aligned that year, as Maris Otter became one of the most celebrated barley varieties of the past century. Today it makes up less than 0.1% of global brewing acreage however, having lost commercial favor due to smaller yields than more ‘modern’ barleys. But it’s incredibly flavorful and we love it. Brewed as a Pilsner-style lager, Maris Otter lends a rich golden color and a dense creamy foam. Aromas of spicy peppermint, lemon preserves, and sweet alfalfa are anchored by a solid mid-palate and a long flinty mineral finish.

Autumn 2025 Hourani Pilsner - This beer showcases Hourani, an ancient wheat variety recovered from the ruins of the Roman–Biblical era fortress of Masada in present-day Israel in the 1960s. Before the Roman siege, the city’s inhabitants buried these seeds for safekeeping. Recently revived by Elizabeth DeRuff and Honore Farm & Mill, it was grown organically and regeneratively in Northern California at Full Belly Farm—an early supplier to the famed Chez Panisse. Brewed as a Pilsner-style lager, Hourani is fragrant and complex, with notes of fresh straw, mint, and exotic spices. The palate is generous, with long length and invigorating energy.
